I used to make this 'Zuké' Don using those off-cuts. If you can purchase Sashimi quality fresh fish, why don't 'Zuké-dare' (Marinade). Zuke-don marinade is a mixture of soy sauce, sake and mirin.

The ingredients needed to make Sashimi ‘Zuké Don':
- Make ready 100-150 g Fresh Fish Fillet *make sure it is fresh enough to be eaten uncooked
- Prepare *Note: You can slice it by yourself OR purchase Sashimi slices
- Prepare *Recommended fish are Tuna, Salmon, Yellowtail, Kingfish, Snapper, Whiting, etc
- Take 1 serving Freshly Cooked Rice
- Prepare 1/2 sheet Toasted Nori *tear into small pieces
- Take Yakumi (condiments) of your choice
- Take *e.g. Shiso, Wasabi, Spring Onion, Toasted Sesame Seeds, etc
- Take <Marinade>
- Get 1 teaspoon Mirin
- Get 2-3 teaspoons Soy Sauce
- Take 1/2 teaspoon Wasabi
- Make ready 1 teaspoon Grated Ginger
Salt pickles were first produced in ancient. Sashimi is a Japanese delicacy consisting of fresh raw fish or meat sliced into thin pieces and often eaten with soy sauce. The word sashimi means "pierced body", i.e. "刺身" = sashimi, where 刺 し = sashi (pierced, stuck) and 身 = mi (body, meat). Comes with daily appetiser, fruit of the day, miso soup & rice.

- Make the marinade first. Place Mirin, Soy Sauce, Wasabi and Grated Ginger in a small bowl and mix well.

- Half fill a bowl with freshly cooked rice, cover with the Toasted Nori and place marinated fish pieces on top. Place some finely sliced Shiso or chopped Spring Onion, and/or other condiments of your choice and enjoy.
