Andhra Style Dondakaya Menthi Karam Koora Recipe has been in my family since generations. Packed with flavours, this recipe goes well with steamed rice for lunch or dinner. This is a side dish that you can make even when you have less hand at time, since this is just a stir fry with recommended spices.

- Make ready 1/2 kg gerkins
- Prepare 2 tbsp oil
- Prepare 1 tsp jeera / cumin
- Take 1 tsp mustard seeds
- Take 1 red chilli
- Get 1/4 inch ginger
- Prepare 4 garlic cloves
- Get 2 1/2 mounted tsps salt
- Take 2 tsp chilli powder
- Get 2 springs curry leaves
- Get 1 tsp turmeric
- Make ready 1/2 Coconut (dried/fresh)
- Make ready As needed- Coriander
Ivygourd or dondakaya is commonly used to make chutney or curry in most andhra homes. Most times i make a stir fry / vepudu without the addition of onion or tomatoes, but flavored with coconut and sesame seeds powder. That one goes good with plain rice, sambar or rasam. This is a variation of the Menthi Podi Vesina Dondakaya Koora.
Instructions to make Dhondakai koora:
- Cut gherkins into 8s.
- Heat 2 tbsps oil in a pan.
- Add gherkins, cumin, mustard seeds, red chilli. Mix. Cook for 10 minutes.
- Make ginger garlic paste
- Add salt. Wait for water to evaporate and oil to come out. Add ginger-garlic paste, curry leaf, turmeric. Cook for 3 minutes (until ginger-garlic aroma comes out)
- Add chilli powder. Mix. Cook for 5 minutes (until gherkin is cooked.)
- Take half a coconut (dried/fresh). Mixie it. Add after the gherkin is cooked. Cook for 10 minutes if fresh coconut and 2 minutes for dry coconut.
- Cut coriander.
- Add coriander for 2 minutes (can add with dried coconut but after fresh coconut).
This version of the Dondakaya koora is spicier and satisfies the craving for hot and spicy food. Then make slits lengthwise and stuff them with masala and keep aside. Heat oil in a pan and place these stuffed ivy gourds and sprinkle a little salt, as the masala already contains salt. Cover and cook in medium flame for a while, stir in between. Note: Cutting the gerkin into even pieces is important.
