- Make ready 1 cup Coriander seeds
- Prepare 20 Red chilli
- Take 1/2 cup Toovar dal
- Prepare 1/4 cup Bengal gram
- Prepare 3 tbsp Black pepper
- Prepare 1 tbsp Jeera
- Make ready 1 tbsp Fenugreek seeds
- Prepare 1 tsp Turmeric powder
- Prepare 2 tbsp Curry leaves
- Take To Temper:
- Get 2 tbsp Gingelly oi
- Take 1 tsp Mustard seeds
- Get 1/2 tsp Fenugreek seeds
- Make ready 2 no Red chilies
- Take 5 Garlic chopped
- Make ready 1 tbsp Channa dal
- Prepare 2 tsp Peanuts
- Take 1 tsp Urad dal
- Get pinch Hing
- Get leaves Few Curry
Serve with a veg kurma or avial. This recipe uses dried manathakkali (which is actually easier to find) and adds a piquant flavour to a traditional kuzhambu (gravy). You can order dried manathakkali on. Usually we add the sun dried berries (Manathakkali Vathal), Sundakkai Vathal or vegetables like Yellow Pumpkin, Ladyfinger, Brinjal or just Pappad.

- Soak tamarind in hot water for 20 minutes. squeeze the pulp and keep aside.
- Dry roast all the ingredients under the topic "Vatha Kuzhambu Powder". Cool down and grind to powder. Store this in airtight container and you can use upto 2 months.
- In iron kadai or you can use anyother. But iron kadai taste much good. Heat gingelly oil once hot add mustard seeds. Once mustard done crackling add fenugreek seeds, red chilli, channa dal, peanuts, urad dal, hing and curry leaves. Cook until all dals turns golden brown.
- Add manathakkali vathal and roast for couple of minutes in low flame. Now add vathakuzhambu powder, turmeric powder, chilli powder, grated ginger and chopped tomato. Saute for 5 minutes in low flame.
- Now add tamarind water and salt. Cover and cook in medium heat for 10 to 15 minutes until oil separates from the gravy. Stir occasionally.
- Now add jaggery and cook for another 2 minutes. Add ghee and adjust the salt.
- Switch off the flame and serve hot with rice, papad..
Instead of sun dried berries, we can use fresh unripe berries to make the delicious Manathakkali Kai Kuzhambu. Manathakkali Keerai, is a very healthy greens especially for curing mouth-ulcers.
