Steps to make Egg Kheema:
  1. Heat oil in a frying pan for 2 minutes on medium flame. Add the minced onions, spring onion and green chillis into the pan and let it fry until the onion appears lighter. (Do not wait until it turns light yellow or brown). On the other hand, crack the eggs into a bowl and slightly beat the eggs.
  2. Add tomatoes, salt to taste, the garam & chicken masala (any brand can be used, but for this recipe Everest was used), chilli powder and coriander leaves. Mix and let it cook in medium flame until the oil separates from the spices. Stir once or twice in between. Do not add water.
  3. Add the beaten egg into the frying pan and let it cook for a while, do not let it cook completely πŸ˜…. Break the cooked egg as you stir. Let it cook for another 2 minutes and stir again. Repeat this process until it is fairly dry. Garnish with coriander leaves and chopped green chillis (if you want added spice). Serve hot with bread or buns. Can be eaten any time of the day.
