Generously brush with the tonkatsu glaze and drizzle with as much mayo as you like. Garnish with the green parts of the scallions and crumble as many kale chips as you like over the top. Serve the remaining kale chips on the side. Okonomiyaki is basically a giant savory pancake, filled with various odds and ends (fancy stuff like prawns or bacon), and topped with an intricate cross-stitch pattern of Kewpie mayo and special Japanese-style BBQ sauce.

Steps to make Kale Okonomiyaki:
  1. Make the batter by mixing the Flour, Water, Eggs, Salt and Dashi Powder.
  2. Add thinly sliced Kale leaves and Carrot to the batter and mix it well.
  3. Oil a barbecue hotplate or a frying pan and cook pork on both sides.
  4. Pour the Kale batter mixture over the pork pieces to form pancakes. When the edge of the pancake has set, flip it over and heat for another 2-3 minutes, or until the batter has cooked through. You may turn the pancakes over a few times while cooking.
  5. Place the pancake on a plate with the pork on the top. Dress with Okonomiyaki Sauce and Japanese Mayonnaise, and sprinkle with Katsuobushi and Aonori. Benishooga (pickled ginger) also goes well with this as a topping.

It's then finished with generous portions of thinly-sliced green onions and/or nori (dried seaweed) and a handful of. The first time I tried okonomiyaki, Jack and I were in Hiroshima. In Hiroshima-style okonomiyaki, layers of fried vegetables, meat, seafood, noodles, and eggs top a thin flour pancake. It's delicious, but it's tricky to replicate on a regular stove at home.
