The ingredients needed to make Minty Hummus:
- Take 3/4 cup kabuli chana (white chickpeas), soaked overnight
- Take 3 tbsp. olive oil
- Get 2 garlic cloves
- Make ready 1 tsp. lime juice
- Prepare 1/4 cup sesame seeds
- Prepare handful mint leaves
- Prepare to taste salt
- Get 1 tbsp. olive oil, pinch of red chilli powder/sumac powder, boiled chana & mint leaves to garnish
As a spread - spread it on sandwiches or on a baguette as a delicious summer appetizer. In salads - Add to chicken, tuna or pasta salad in place of mayonnaise or add a dollop on top of your green salad. This mint-flavored hummus couldn't be easier — just combine everything and grind. Almonds add nutrition as well as flavor, and it is completely gluten free and vegan.
Steps to make Minty Hummus:
- Pressure cook the kabuli chana for 5 whistles. When cool, blend with the rest of the ingredients, (except lime juice), till smooth.
- When done, add the lime juice and serve, garnished with more olive oil, mint leaves, red chilli powder / sumac powder and few boiled kabuli chana.
This recipe does not include tahini, a paste of toasted sesame seeds and olive oil that is often added to hummus, but you can taste and add a spoonful or two if you wish. Romina, my youngest, was the one that gave me the idea for this post. Since school started she has been dying to take hummus and carrots for lunch! At her school, some kids take to lunch the store bought, kids size hummus + pretzels combos. She knows, for sure, that I won.
