  4. Prepare 2 Tbsp. Jamaican jerk seasoning (I actually have my own recipe for jerk seasoning)
  5. Prepare 1 cup white rice
  6. Make ready 1/4 C olive oil
  7. Get 1/2 C water (I used 1/4 C water, 1/4 C chicken broth)

Rub the pork with the oil, and rub the spice mixture all over the pork. Add the onion and orange juice to the slow cooker. Transfer the pork to a platter, reserving the cooking liquid in the slow cooker. Place the pork in a large bowl or in a zip-top bag set inside the bowl.

  1. Put the pork chunks, cut green pepper and cut onion pieces into a medium sized mixing bowl. Sprinkle the jerk seasoning over the mixture until nicely coated. Don't be shy!
  2. Preheat a large saute pan to medium-high heat. Add 1 Tbsp olive oil. Add the pork mixture and cook for 5-7 minutes, stirring often.
  3. Stir in 1/2 C water (or 1/4 C water and 1/4 C broth) to pork mixture and reduce heat to low. Cover and simmer for 45-55 minutes until tender and internal temperature is at least 160°.
  4. While the pork is cooking, prepare the rice (according to bag) in a small sauce pan.
  5. Serve the pork over the rice. Delicious!

Stir until the salt and sugar dissolve. Pour the brine into the bag with the pork, squeeze out any air, and seal, or cover with plastic wrap. Add the uncooked rice and cook until lightly toasted, stirring constantly. Add the broth, poultry seasoning, and green onions to the skillet and stir well to combine. Place the pork steaks on top.
