Divide your hummus into several batches and blend it up with these extras for even more flavour and nutrients. We like these ones: beetroot, roast pepper, roast garlic, roast carrots, ginger. ☝️ No lemon juice?☝️ Add a little apple cider vinegar or lime juice instead. Drain chickpeas and place in a large heavy saucepan; add onion, cover with water and bring to a boil over medium heat. Put the beetroot, chickpeas, garlic, coriander, salt and olive oil in a food processor. Add the cumin seeds and lemon juice and season well with freshly ground black pepper.

- Peel the beetroot and chop into medium pieces. Boil for about 30 minutes, until the beetroot is soft. Drain and leave to cool. Mash or blend the beetroot.
- Drain the chickpeas, leave the water to the side. Juice the limes and chop the garlic. In a large bowl add all of the ingredients together with 2 tablespoons of the chickpea water and whizz together (using a standing or hand blender.)
- Season to taste. If the hummus is dry add some more chickpea water. Adding more tahini or oil will make it more rich. When it's smoothly combined transfer to another bowl and drizzle with a little oil and lime.
We tried this with a few beets left in our garden. Although they were not fully purple in color, the dish did turn out in a pastel purple. A majority of our family is receptive to traditional hummus, so as long as I don't keep mentioning beets, it will get eaten. When they're done, a skewer or knife should go all the way in easily. Drain, then set aside to cool.
