If you're using minced (which I would not recommend for the reason you noted). Anchovy paste adds umami punch to an elemental garlic-and-butter sauce that's perfect tossed with a thin pasta like spaghetti. It's my last minute go-to dinner that I devour about once a week. When the garlic and anchovies are just starting to stick to the bottom of the pan, deglaze by pouring in the wine. With a slotted spoon add the pasta to the saute pan with the shallot anchovy mixture.
