- Take 1/2 cup Grated carrot

- Wash and grate the carrot.
- Heat one tbsp clarified butter in a pan
- Add grated carrot and saute for 3 - 4 mins and keep aside.
- Boil milk in a heavy bottom vessel.
- Once boiled keep it in a low flame.
- Add grated and fried carrot.
- Stir occasionally,cook till thickening of the milk
- Add cardamom powder and mix well.
- Add cashew nuts,raisins and almonds and mix well and turn off the flame.
- Once cooled add the crushed jaggery and mix well
- Garnish with almonds and serve.
If making for babies, use jaggery that is free from impurities else melt the jaggery in water. Filter to remove impurities and boil till it thickens. Add the mashed carrots to the jaggery syrup (adjust the taste and add little by little). Let the mixture boil for sometime till the water in the carrot dries up. The acidity in the jaggery will curdle the milk if they boil together.
