It has a distinct sweet and tangy flavor that appeals to many palettes. The mango is roasted on direct flame.
Steps to make Raw mango jaggery Chutney:
- Wash and cut raw mangoes into small cubes. You can peel off the skin if you wish to otherwise it's okiee to take the skin along.
- Heat up a pan. Add oil. When hot add in mustard cumin seeds. Then add asafoetida.
- Add chopped mangoes.
- Add 1/2 cup water cover and cook for 2-3 mins.
- When mangoes are cooked add in jaggery, salt, red chilli powder, coriander powder and mix well.
- When Jaggery melts turn the gas off.
- Serve the chutney with roti, paratha and thepla. You can also have it with Pulao or rice.
