The ingredients needed to make Aam panna with jaggery:
- Make ready 2 big Green Mangoes
- Take 2 teaspoons Roasted cumin seeds
- Take 1 tablespoon Kala namak (Black salt)
- Take 1/2 teaspoon Crushed black pepper
- Get 6 tablespoons Grated Jaggery
- Prepare 4 cups Water
- Prepare 1 handful Fresh Mint leaves
For the sweetener, you can use sugar or jaggery. Since I made a video, I have used sugar as in some countries jaggery may not be available. Aam panna recipe or kairi panna (Indian summer drink) - Make a big batch of mango panna concentrate and store in refrigerator and use as Jaggery (or sugar) - Increase or decrease the amount as per the tartness of your mangoes. Roasted cumin powder - Dry roast the cumin seeds on.
Instructions to make Aam panna with jaggery:
- Wash and clean mangoes - Put them in a pressure cooker with 1 glass of water and cook fr 3-4 whistles
- Once they cool down, open the cooker and take out the mangoes - Discard the skin and take out pulp with a spoon.
- When the pulp cools down take it to a blender and add spices and grated jaggery. - Note: you can melt jaggery before adding to the pulp
- Give a nice churn so that mango chunks become paste nicely blended with spices.
- This will a thick pulpy mass - Add chilled water and ice cubes - Add chopped mint leaves for garnish - Serve chilled
Traditional Aam Panna recipe from the Maharashtrian cuisine is made by cooking the raw mangoes and mixing the pulp with jaggery, salt, cardamom, and saffron. In Northern India, other spices and mint are also added to this drink. Either ways, this is way too delicious to not make it during summer. Aam Panna is a popular summer drink across North India.
