  2. Take 2 1/2 cup Jaggery

  6. Prepare 3-4 tbsp ghee and little for greasing the plate
  7. Prepare 3 cups water(1 cup is for Jaggery and 2 cups for ragi)

Traditionally ragi halwa is made by soaking whole ragi grain overnight, extracting milk from it then the milk is mixed with sugar syrup.   1. Soak the ragi overnight for 7-8 hours.
  2. Add 1 cup water to the Jaggery and bring to a boil and melt it. String consistency not required. After Jaggery melts strain to remove impurities if any and keep aside.
  3. Strain and remove water from soaked ragi.
  4. Add ragi into a blender with water until smooth and fine to extract milk from ragi.
  5. Add more water if required while grinding. Add little at a time.
  6. Extract ragi milk using a muslin cloth from the ground ragi mixture.
  7. Repeat the process of extracting the milk another 2 times by adding water and grinding the sediment of ragi.
  8. Add the Jaggery water to the extracted ragi milk and also add elaichi powder.
  9. Grease plates with ghee and sprinkle coconut powder and keep it ready.
  10. Transfer the ragi milk mixture to a heavy bottom vessel and bring it to a boil.
  11. Keep stirring continuously on medium heat.
  12. As the mixture begins to thicken add ghee little by little and keep stirring.
  13. Touch the Halwa and see if it does it stick to the hand and starts leaving the sides, the halwa is ready.
  14. Pour the cooked mixture onto the greased plate and spread evenly. Sprinkle coconut powder on top also.
  15. After it cools down cut the Halwa into desired shape.
  16. Garnish with cashew nuts.
  17. Do not store the ragi milk for long time as it will turn sour. The Halwa is best enjoyed with ghee.
