- In a wok heat 1 cup oil, then add onions and fry for 2 minutes half cooked then add the zucchini and stir fry for 3 minutes then add the capsicum, French beans and tomatoes and stir fry for another 5', add salt & black pepper.
- Let the veges almost cook then pour the egg's mixture on top, make sure evenly spread then sprinkle the grated cheese on top and put the lid on. After 3 minutes lower down the stove temp. Though on top the mixture is liquify with cheese but underneath the omelette starting to be burnt. So with the flat spatula, cut on top of the omelette in four then quickly turn over all four portion of the segment, then put the lid on and let it cook for 2 '. Cook, remove and transfer to a serving dish.
